In preparation for May 5th we found a Cinco de Mayo recipe idea from one of our favorite new sites, WeekNight Bite , we couldn't resist. But first, a little bit about this day sometimes known more for margaritas and mayhem.
Cinco de Mayo is a celebration of Mexican heritage and pride. In the state of Puebla in Mexico, it is observed to commemorate the Mexican army's unlikely victory over French forces at the Battle of Puebla. It also commemorates the cause of freedom and democracy during the first years of the American Civil War.

Now, about that recipe.
2 Tilapia fillets - cut in half lengthwise
1/4 cup ground flax meal/flaxseeds
2 eggs
1/2 cup cooked quinoa
2 tbsp coconut oil
Salt & Pepper to taste
Mango-Avocado Salsa
1/2 avocado
1/3 cup diced mango
1/3 cup chopped cherry tomatoes
1 diced shallot
1/4 cup cilantro
Juice of 1/2 lemon
Salt & Pepper to taste
